Spiced Cranberry Sauce

Fall is here and it's almost time for Thanksgiving!  That means it's time to gear up for that wonderful feast to share with family!  Eh, those cans of "cranberry sauce" are okay--I guess.  That is, until you have this stuff.  Oh the spices make it so good!  The amount of sugar is low--and there is none of that refined sugar stuff.  I hope you try this out and enjoy it as much as I have!  I can't wait for the rest of the family to have some of this on Thanksgiving Day!


Spiced Cranberry Sauce

1 c. water
1 T. + 2 t. gelatin (about 2 packets)
1 lb. cranberries (about 4 cups)
1 c. unfiltered apple juice (about 3 apples juiced fresh)
juice of one orange
2 t. ground cinnamon
1/2 t. ground ginger
1/2 t. ground nutmeg
dash ground cloves
dash ground allspice
2-4 T. honey (depending on your desired sweetness--OPTIONAL)

Stir cold water and gelatin together; set aside.

Meanwhile, simmer cranberries, apple juice, orange juice, and spices for approximately 10-15 minutes, until it has reduced a bit and thickened slightly.  Add in gelatin mixture and honey (start with less honey... you can always add more).  Cook for an additional 5 minutes to allow gelatin to fully dissolve. Pour into a container and place in the refrigerator for a minimum of 3 hours before serving.  This will produce a thicker, jelly-like, cranberry sauce.  The tartness would accompany a Thanksgiving Day turkey nicely.
