Zucchini "Pasta" (Without Any Fancy Tools)

To make Zucchini "Pasta", all you really need is a zucchini (actually, I had a Mexican squash, which is pretty much equivalent to a zucchini), a knife, and a cutting board.

Wash your squash.  Slice them thinly.  Stack the slices.  Slice thinly again.  What you should have are nice julienned squash without having a nice dent in your wallet.  No need to spend money on or find a place to store one of those spiffy spiralizers.


To make the "pasta", I put it in the skillet with a nice drizzle of olive oil, a generous portion or garlic, as well as some salt and pepper to taste.  Saute on low until tender and heated through, but not over done.
No one likes over done "pasta".  : )





Serving Suggestion:

Serve under Karissa's Meatballs, smothered in Karissa's Zesty Coconut Sauce.  Enjoy!

Balsamic Steak Alfredo

Start with steak.


Cover it with some olive oil, lemon juice, garlic, salt, pepper, and rosemary.  


Cook your pasta according to the directions. 


ook your steak in a Cast Iron Skillet.  It should take about 3-4 minutes per side.  Once it is finished, let it rest while you finish up the sauce. 



While the steak is cooking, slice grape tomatoes in half.  Drizzle them with oil, salt, pepper, and garlic.  Broil them until they are starting to blister slightly, turn them over and broil them a bit longer. 


In the same pan, pour in the Alfredo sauce. You can make your own, or you can use your favorite store-bought sauce.   Using the same pan allows the flavors from the steak to permeate the sauce. 


Mmmm.


Mix in the noodles.  


Place the noodles and sauce on the plate.  Top with some steak.  Drizzle with balsamic glaze.  Sprinkle Feta cheese and tomatoes on top.  Mmmm.

Chicken and Cheese Tortellini Salad

 EASY and DELICIOUS

All you need:

Cheese Tortellini
Cherry Tomatoes
Chicken {rubbed with basil and lemon pepper}
Pesto Sauce
Romaine Lettuce
Bagel

Cut Bagel into thin slices.  Lightly oil and sprinkle with garlic powder.  Toast in a toaster oven or under a broiler until golden brown.

Cut the chicken into bite sized pieces and cover with the rub.  Cook it in a lightly oiled saute pan until browned.  Cook tortellini as directed on package... they usually take about 5 minutes to boil.  Cut the cherry tomatoes in half.  Toss together with desired amount of Pesto Sauce.  

Cut up the lettuce.  This is the bed for the rest of the dish.  Scoop the other ingredients on top to serve.
